Hello, and welcome to chapter 5 of my baking blog!
Today we're making Cake Pops! I personally am a huge fan of cake pops, as I feel as if they're one of the more palatable forms of cake. (Don't worry though, we'll make a real cake eventually!) This recipe is meant to be rather flexible, so feel free to try out all sorts of cake and coating options! Let's begin!

Servings: ~50
Prep time: 45 minutes
Cooking time: 30 minutes
Cooling time: 120 minutes

Ingredients:
<Cake
>1 Package of Cake Mix (~15 ounces) (You can use practically any flavor of cake mix; I used a cherry-chip cake mix, but if you're not sure, yellow cake mix tends to be the traditional option)
>1 Cup of Water
>3 Eggs
>1/2 Cup of Vegetable Oil
>8 Ounces of Cream Cheese (Softened) (1 Package)

<Coating
>2 Cups of Chocolate Chips (I used white chocolate chips for my batch)
>Sprinkles (Optional)

>Lollipop Sticks (~50)

Baking Tools Needed:
>Oven
>Refrigerator
>Electric Mixer
>Medium Mixing Bowl
>Large Mixing Bowl
>Glass Baking Dish (~9x13 inches)
>2 Oven Mitts
>Knife
>Small Bowl for cracking eggs (Not required but recommended)
>Baking Sheet + Parchment Paper

Directions:

>Preheat oven to 350 Degrees Fahrenheit
>Mix together all "Cake" ingredients excluding the Cream Cheese together in Medium Bowl until smooth
>Pour Cake Batter into Glass Baking Dish and put in Oven for 30 minutes
>Test to see if it's fully cooked by sliding a knife or toothpick into the cake, if it comes out clean, it's done cooking, if not, let it cook for a few more minutes and try again
>Cool cake for at least an hour; I recommend moving it to a refrigerator after 15 minutes
>Take cake out of Baking Dish and crumble it into the Large Bowl
>Add the Cream Cheese to the bowl and combine thoroughly; I recommend using your hands to properly combine the two
>Roll Cake into balls with a diameter of around 1.5 inches (3.5cm) and stick Lollipop sticks inside, laying them on a Baking Sheet with Parchment Paper
>Let Cool in refrigerator for 30 minutes
>Melt Chocolate Chips, and dip Cake Pops inside; add sprinkles if using them
>Cool for 30 minutes
>Enjoy!

Storage: I'd expect these to last for at least a week if refrigerated. The process of rolling the mixture into balls can be split apart if needed, just make sure that you also refrigerate your remaining Cake Mixture.

Thank you all for your patience with this chapter; I originally was having some troubles with the coating and needed to experiment to find better options. The coating could also probably be replaced with a custom glaze, but I wanted to keep it simple for now. This is the sort of recipe that has many possible variations with the cake flavor and coating, so I'd love to see pictures of any that you make! Thank you for coming to my blog!

I am so happy its finally back! these look really good, I think cake pops have a really nice ratio of cake to frosting.
