I'll start with some bread I made this morning. It didn't come out as fluffy or airy as i would have liked, and I think its because the dutch oven I was using was too small for it to rise very much. Oh well, the last few times I tried to make bread it barely rose at all so this is an improvement. It was still good anyway.

its so unpredictable but if you spritz the bread before you put it in the dutch oven i find the extra steam helps pressurize it and it rises a little better idk if that might help its worth trying
